Spicy Cherry Crumble

Do you struggle to sleep at night?

Give the following recipe a go, the melatonin in the cherry have sleep inducing properties and the slow release of the carbs from the oats will keep you fuller for longer.

Spiced Cherry Crumble (sugar, gluten and dairy free)

180g cherries stoned (fresh or frozen)
1/2 tbsp brown rice syrup
50g oats (gluten free)
40g coconut flour (gluten free flour, almond flour)
1/2 tsp ground cinnamon
1/2 tbsp walnut oil (light olive oil, coconut oil)
1 tbsp chopped pecans

1) Pre heat oven to 180C / 350F / Gas mark 4.

2) Place the stoned cherries in a small pan with around 1/2 tbsp of water and the rice syrup.

3) Heat over high heat for 5 minutes or until cherries soften and turn jammy.

4) Combine oats, coconut flour, cinnamon, oil and chopped pecans in a bowl until you create a breadcrumb texture.

5) Now place cherries in to a small baking dish or separate ramekins.

6) Top the cherries with the oat mix and bake in the oven for 15-20 minutes or until golden.

7) Remove and allow to cool before serving… Great with whipped coconut cream or live probiotic yoghurt and an extra sprinkle of cinnamon.
